Mustard which bears a scientific name  Brassica Nigra  (Black Mustard) or  Brassica Hirta (White Mustard).

Mustard seeds, from which mustard oil comes , contain calcium, protein, vitamins A and E, alpha omega-3 and alpha omega-6 fatty acids.
A tbsp. of mustard oil has no carbohydrates, fiber or protein like other vegetable sources, The acid in the oil's polyunsaturated content is one that our body cannot make. We must get it from food. One tbsp. of mustard oil contains 0.8g of omega-3 fatty acid.

Mustard oil in broad are comes from three different ways from mustard seed.

  1. A fatty vegetable oil that comes from cold pressing the seeds. You can find this substance and fatty acids (Oleic, Linoleic and Erucic Acid) is essential in mustard oil. There are also several antioxidants such as vitamin E.
  1. Essential oil and is extracted by grinding the mustard seeds, mixing with water and through distillation.
    Myrosinase and a glucosinolate called Sinigrin are two enzymes  remain isolated under normal condition in mustard seed either black or white. While pressure or  heat is used in production of mustard essential oil which induces a reaction with enzyme Myrosinase and a glucosinolate from mustard seeds. These two together make Allyl Isothiocyanate from (Black Mustard) and normal Isothiocyanate from (White Mustard) which is toxic by its nature.
  1. By infusing mustard seed extract with other vegetable oils.

 

Heart Health :
Mustard oil is rich with monounsaturated and polyunsaturated fats, which is helpful to balance cholesterol levels in the body. Dieting habit with mustard oil improves cholesterol level by lowering triglycerides and blood fat level and in return prevents obesity, kidney diseases, hyperthyroidism and thus also keeps brain cells healthy.
Mustard oil also improves red blood cell membrane structure.

Anti-bacterial effect :
Mustard oil fights with bacterial infections inside the colon, intestines, urinary tract and other parts of the digestive system.

Anti Fungal:

Mustard oil serves as an anti fungal agent, due to presence of Allyl Isothiocyanate. It does not allow fungal growth and also inhibits if there is any on the body.

In fact, mustard oil sold in the U.S. must be labeled "not for human consumption" and has only been approved for use as a massage oil.

Initial studies of the effects of erucic acid on rats showed the substance to be harmful, however it is now generally believed that those studies were flawed and that the rats reacted poorly to other oils that are considered safe for humans, too.

 

The U.S. Department of Agriculture's 2005 Dietary Guidelines for Americans recommend that you limit daily oil consumption to 6 tsp. or 2 tbsp. in a standard 2,000-calorie diet.
